Hiiumaa’s Restaurant Week at Viscosa

“I’ve been waiting for yoooooo” — that’s what the Hiiumaa organic beef tartare would say, if it could talk. If Hiiumaa were a soup, it would certainly be fish soup — simple on the surface, but far deeper in flavour than you’d expect at first glance. If autumn had a taste, it would be sweet-sour-umami. Think of autumn apples, lingonberries, pickled root vegetables and pan-fried mushrooms! If the wind in Hiiumaa were a spice, Viscosa would shake it into cream-filled puff pastries to make them even lighter. If a true islander walked through the door and said “surprise me!”, we’d serve chanterelle crème brûlée. If we could, we’d make all flounder plump year-round and debone them too — fish lovers will understand!

At Viscosa Resto, we draw inspiration from the village eccentric turned world traveller, who brings creativity, humour and a healthy dose of wild ideas to a slightly bohemian kitchen!
